However tiny particles of fish remain in the final drink.
Do fish have swim bladders
You might be surprised to hear most bony fishes have a special organ to help them with that: a swim bladder. This is a thin-walled sac located inside the body of a fish that is usually filled with gas.

Isinglass finings are widely used as a processing aid in the British brewing industry to accelerate the fining, or clarification, of beer. It is used particularly in the production of cask-conditioned beers, although a few cask ales are available which are not fined using isinglass.
Is isinglass still used

Isinglass is derived from the swim bladders of certain tropical and subtropical fish. “When macerated and dissolved for several weeks in dilute food-grade acids, they form a turbid, colorless, viscous solution largely made up of the protein collagen. This material is known to brewers as isinglass finings.”
Is wine filtered through fish bladders
Popular animal-derived fining agents used in the production of wine include blood and bone marrow, casein (milk protein), chitin (fiber from crustacean shells), egg albumen (derived from egg whites), fish oil, gelatin (protein from boiling animal parts), and isinglass (gelatin from fish bladder membranes).
